Chef Ross Warhol at Stillwater Farms...The Sequel
Those of you that attended last year know what fun it was, so back by popular demand, we will open the 2021-2022 season at Stillwater Farms with Ross Warhol.
This will NOT be your average Chaîne event. We will be dining casually “en plein air” /“al fresco on a beautiful farm in Boston NY. We will be able to see how the meats and poultry we enjoy is lovingly and responsibly raised. There will be a brief reception at 3PM, followed by a chance to experience the farm, and see their process (No butchering is done on the farm itself). We will be able to watch Chef Warhol prepare the food, which will be served by the family and friends of Stillwater Farms. A portion of the proceeds from dinner will go to the Stillwater Foundation which provides similar dining experiences to Roswell pediatric patients. Dinner and the reception will be held under open air tents, so the event will go rain or shine, unless it is a torrential downpour.
Stillwater Farm- Owned by Jay and Margaret Braymille, Stillwater Farm is a small, family operation owned by Jay and Margaret located on 32 acres in the rolling hills of Boston, New York. They purchased the farm in 1991 and have lived there with their daughters ever since. They slowly rehabilitated the 200-year-old farmhouse that came with the property and worked diligently to regenerate the long-neglected land. Today, they raise sheep and chickens for market. Their farm is also home to companion animals, including horses, donkeys, some sheep who are life time residents and a potbelly pig named Eleanor Pigby. Whether they’re destined for the table or life as a family pet, they treat every animal with the utmost care and dignity, ensuring every day they spend on the farm is a happy one. Stillwater Farm is a marriage of two people, their experiences and values, and a testament to their love of animals and the outdoors. Jay, and architect by day, grew up on a dairy learning the principles of livestock husbandry. Margaret, who runs the pediatric oncology department at Roswell Park Comprehensive Cancer Center, the granddaughter of a butcher, was raised with a deep respect for animals and the nourishment they provide. Chef Ross Warhol:
What more can we say about Chef Rôtisseur Ross Warhol? Besides us, he has cooked for Academy nominees John Krasinski and Emily Blunt repeatedly while they were in Buffalo filming. His credentials include stages at Alinea (widely regarded as the best restaurant in the USA), El Bulli (often regarded as the best restaurant in the world prior to its recent closing), French Laundry, Frantzen/Lindberg, education at CIA Hyde Park and CIA St Helena. He learned under the watchful eye of Daniel Johengen at Daniel’s in NYC. He’s been written up by the NY Times, been featured at a James Beard Dinner, and we are so lucky to have him here in Buffalo, where he was born and raised. His passion for local, fresh ingredients and international influences creates inspiring experiences at Oliver’s, Britesmith, and in the near future, a new farm to table restaurant in the Southtowns (can't wait for that!!)
